One of the best parts of a road trip is the snacks. So I think it is time to level up our portable snacks to avoid all bouts of hanger.

Road Trip Snacks
These road trip snack ideas are perfect for when you are traveling and want to make sure you never go hangry.
Ingredients
Crispy chickpeas
- 1 can Chickpeas
- 1 tablespoon Olive oil
- 1/2 teaspoon Thyme
- 1/2 teaspoon Basil
- 1/2 teaspoon Parsley
- Pinch of salt
Trail mix
- 1/4 cup Slivered almonds
- 1/4 cup Pecans toasted
- 1/2 teaspoon Coconut oil to toast the pecans
- 1/4 cup Sunflower seeds
- 1/4 cup Pumpkin seeds
- 1/3 cup Raisins
- 1/3 cup Unreal dark chocolate candy
- Pinch of salt
Energy Balls
- 12 Medjool dates
- 1 tablespoon Maple syrup
- 1/2 scoop Protein powder
- 1 tablespoon Hemp seeds
- Shredded coconut For topping
Instructions
Crispy chickpeas
- Preheat your oven to 425F
- Rinse and dry your chickpeas
- Optionally remove the chickpea skins for a crisper result
- Add chickpeas to a baking sheet
- Add olive oil, thyme, basil, parsley and olive oil to the chickpeas on the tray
- Toss the mixture until the chickpeas are coated
- Bake for 30 -35 minutes
- Let cool and store in an airtight container
Trail mix
- In a pan on medium low heat, toast the pecans in the coconut oil
- Add pecans, chocoalte candy, sunflower seeds,pumpkin seeds, slivered almond, raisins and a pinch of salt to a bowl
- Toss the ingredients to mix
- Store in an airtight container and enjoy!
Energy Balls
- Add dates, hemp seeds, protein powder, and maple syrup to a food processor
- Blend until the mixture forms into a solid
- Roll mixture into balls (wet your hands if the consistency is difficult to roll)
- Top with shredded coconut
- Place the energy balls in an airtight container and refrigerate to help solidify
- Pack them to go and enjoy!
