When I am preparing for a trip I like to get creative in the kitchen to help use up the ingredients that I have lying around. As a result, I developed this quick and easy vegan pantry meal.

Quick and Easy Vegan Pantry Meal
I developed this quick and easy vegan pantry meal for those days when you didn't have time to get to the grocery store.
Ingredients
- 1/3 cup Frozen broccoli
- 2 tbsp Kimchi
- 1 serving Sweet potato noodles
- 1 serving Vegan hot dogs (sub for regular if you don't want to use vegan)
- 1 tsp Sesame seeds
- 1 tbsp Chinese five spice
- 1 tbsp Sesame Oil
- 2 tbsp Soy sauce
- 10 oz Broth of choice
Instructions
- Bring your broth to a boil
- Defrost your broccli in a pan
- Slice your vegan hotdog to bite sized pieces
- Once the broccoli has release some liquid, add your hotdog
- Sautè on medium high until the broccoli is fully defrosted and the hotdog is starting to brown
- Lower the heat to keep the broccoli and hotdogs warm
- Cook your noodles to package the instructions
- Cut up your kimchi while the noodles cook
- Drain your noodles and them to the pan with your broccoli and hotdogs
- Add the kimchi, Chinese five spice, sesame seeds, soy sauce and sesame oil
- Mix until the noodles start to take some of the color from the Chinese five spice and soy sauce
- Plate and enjoy!
